BALSAMIC VINEGAR OF MODENA PGI
Balsamic vinegar has been produced in Modena and Reggio Emilia since the XII century.
Our Fontana FORMIELLO balsamic vinegar of Modena is made in Modena, Emilia Romagna, from a blend of grape must and wine vinegar, and it is maturated in wooden barrels.
Grape must is the aged grape juice concentrate that forms the rich sweet base flavour of balsamic vinegar. Typically, producers of other balsamic vinegars will have a low level of grape must and then add caramel colouring to make their vinegar look darker. Our balsamic vinegar contains 35% grape must; a higher percentage than most other brands, and we do not add any caramel colouring to it.
As a result, we can offer an end product that is free from caramel colouring, of higher quality, natural density, and strong, intense flavours.
Our tinned beans consist of quality beans, which we carefully rehydrate and then cook.
We select only the most wholesome dried beans from around the world, and have developed a natural way to maintain their texture and colour. While most canned beans contain chemicals like calcium chloride, EDITA calcium disodium ethylenediaminetetraacetic acid, or ascorbic acid, we simply soak our beans for less time, to maintain their natural hardness and their mostly original colours. Finally, as we are free from these chemicals we also do not need to add any salt to enhance their flavour and can our beans in natural water with no chemicals added.
The result of our natural process is ready-to-eat beans with good uniform texture and a distinct taste and aroma, which are perfect in salads, pasta or stews.
Our canned bianchi du spagna and borlotti beans in water with no salt added were awarded 1 star at Great Taste Awards 2013 in London.
